Dum Aloo & Vegetable Jhalfrezie... for the love of Cooking!!!



Had unexpected guests yesterday night. Thank God, there were boiled Potatoes and some vegetables in the fridge which I always keep in case of emergency. So I set out to make the mouth watering Dum Aloo dish along with Vegetable Jhalfrezie. I would love to share it with you.


Dum Aloo


Dum Aloo is a classic North Indian dish with baby potatoes boiled in a rich and spicy tomato based gravy. 
This heart warming bowl of comfort along with Indian flat breads can transport one to food heaven!! :)
Today a very Indian recipe that does perfect justice to my favorite Aloo coming for you. I hope you enjoy it.


Ingredients


Boiled Potatoes medium                         8
Onion                                                    1 large,chopped fine
Ginger Paste                                          1 tbsp
Tomato Paste                                         1 1/2 cups
Coriander leaves                                    1/2 cup,finely chopped
Salt                                                        to taste
Kashmiri Chili pd                                   1/2 tsp
Turmeric(Haldi)                                      a large pinch
Asafoetida(Hing)                                    a large pinch
Coriander pd                                         1 tbsp
Garam Masala pd                                  1/2 tsp
Roasted Cumin pd                                 1 tsp
Kasuri Methi pd                                    1 tbsp
Oil                                                        2 tbsp


DUM ALOO


              
 Deep fry potatoes to golden. Heat 2 tbsp oil in a wok. Saute onion till golden. 
Add ginger & tomato paste. 
Saute for 2 min. Add chili, coriander, Asafoetida, turmeric,salt & coriander leaves. 
Cook till oil leaves sides. 
Add potatoes & enough water for a thick gravy. 
Cook on a slow heat,covered for 10 min. Add Garam masala,cumin & Methi pd.Cook for 3 min. Serve hot,garnished with Parathas/Puris.
For a more exotic taste, add 50 gm of Khoya mixed with water.
*You can also substitute tomato with thick yogurt.

Time required: 30 mins



Garnish with fresh chopped coriander leaves and serve with your favourite breads.







Vegetable Jhalfrezie


Another delectable was Vegetable Jhalfrezie. I first had this sumptuous dish in a new & cosy restaurant in Udaipur (Rajasthan) way back in 1989 as no energy was left after buying vegetables in the scorching heat of May :) & since then, me & my family got hooked to it.


Usage of different colored vegetables provides us various Vitamins, Anti-oxidants and Minerals. So the more vegetables we use the more better it would be. 
It is so filling and tasty too. Lets see how to prepare it. 


Ingredients   

  

Capsicum                                            3
Onion                                                  2 large
Tomatoes                                            2 large
Boiled Peas                                         1 cup
Cabbage                                             1/2 cup shredded
Green Chilies                                       2 deseeded & slitted lengthwise
Boiled Corn                                         1/2 cup
Paneer                                                 1/2 cup cut into small cubes
Cheese (Opt)                                       2 cubes
Chili Sauce                                           2 tbsp
Cornflour                                             2 level tsp
Salt                                                       to taste
Pepper                                                 1/4 tsp
Herbs                                                   a large pinch
Butter                                                   1 tbsp
Cream/Fresh Malai                               1/2 cup
Milk                                                     2 tbsp
                  
Cut vegetables into square chunks. Heat butter. Saute Capsicum,onion,cabbage,Green Chilies till a slight change in color. 
Add peas,corn & Paneer, cook for 2 min.Add spices.
Add cornflour & mix well quickly.Lower heat. Mix Milk & cream. 
Add to the vegetables. 
Add sauce & Tomatoes. Keep stirring.
Add grated cheese. Mix well.Simmer for 3 min. 


Garnish with herbs. Dot with chili sauce. 
     


    

Vegetable Jhalfrezie



Serve hot with Garlic Bread/Naan/Puris/Parathas.
