Instant Khaman
Khaman is probably the most recognized Gujarati appetizer or snack.

Ingredients
- Besan ( Chickpea flour/Gram Flour)1 1/2 cups
- Water -1 cup
- Oil -1 tbsp
- Haldi -1/2 tsp
- Salt - to taste
- Sugar - 1 tsp
- Green Chili paste - 1 tsp
- Ginger paste - 1 tsp
- Eno - 1 1/2 tsp
- Baking pd - 1/2 tsp
- Lemon juice - 2 tsp
Method
Make a smooth paste of besan & water.Keep for 10 min. Grease a square baking dish. Add rest of the ingredients to besan mix & immediately pour in the baking dish. Micro on high power,uncovered for 6 minutes.
Tempering:
- Oil - 2 tbsp
- Whole Mustard (Rai) - 1 tsp
- Green chilies - 2-3 slitted
- Water - 3/4 cup
- Sugar - 1 tbsp
Heat oil. Add Rai.
Saute till it stops spluttering.
Add green chilies.Fry till slightly changes color.
Add water & sugar & immediately pour over Khaman. Cover & leave for 1/2 an hour to soak.
Garnish with coriander leaves. Cut diamonds & serve with Green Chutney.
Tip: Instead of Microwave,Steam Khaman
Green Chutney
Coriander leaves : a bunch
Mint sprigs : 10
Green chilies : 8-10
Garlic (Opt) : 2 cloves
Raw Mango (Kairi) : 2
Salt : to taste
Salt : to taste
Asafoetida (Heeng) : a pinch
Roasted Cumin powder : 1 tsp
Grind all. Use enough water for a thick paste.

Tip: Add 2-3 tsp Mango powder(amchur) or 1/2 cup sour curd instead of Kairi!
