Paradise Pears

Ingredients:
                              Red Wine                                         145 ml
                              Cold Water                                       145 ml
                              Pears                                                  4 medium
                              Sugar                                                   100 gm
                             Arrowroot pd                                     1 heaped tsp
                            Cochineal(Red Color)                       3-4 drops  
Method:
               Dissolve sugar,wine,water & cochineal in a  saucepan with a heavy base gently. Boil until syrupy.                          Peel Pears,leaving stalks & removing the eyes.Stand in the boiling syrup with the stalks upwards. Boil for 7 minutes. Baste the pears 3-4 times. Pears should be tender but not too soft.Remove pears gently and arrange on a classy dish.Can arrange in individual dish too. Mix arrowroot pd with a little cold water and add to the boiling syrup. Thicken syrup. Keep stirring till clear(7 minutes approx). Cool and pour over the pears.
                     Serve with softly beaten cream.

Tip: Pears should not be too soft.
       Adjust the quantity of sugar to your likeness.
       Can use Cinnamon pd-1/2 tsp only.
       Serve at room temperature only.
