When I was 8 yrs old, even then I was fascinated by cooking. I remember walking into my Mami's kitchen as the aroma of freshly cooked Parathas wafted through the house.The way those yummy Parathas were being flipped over & those little red dots appearing on the surface, God, it was like magic in the eyes of an 8 yr old girl & who was I to challange the Fate.So, my journey towards this amazing adventure was brought into being.
PS# let me share a little secret. I am almost 50------oh who am i kidding---its only a few days further,on 14th May.Ha Ha Ha. No,No this was not the secret :).The thing is that till today, i can't make soft Parathas or Rotis Or Puris.....whatever. Everybody in my house- my hubby, kids even my Bitch (Blossom) complain. Actually,for kneading dough we had a cook in our house (in my parental home) & that department went to my lil sis Bela later on> By the way she doesn't like to cook. As soon as her Dough work was over, she exited like a jet out of the kitchen.
Enough of my story,you people must be wondering what i am going to churn out today. Hmmmmm......yummmmmmmmm, NO its not any dough chow.LOL. Voila, its my favorite, my Son's much-loved,my daughter's cherished cuisine-Tomato Macroni with lots Cheese.
Tomato Cheesy Macaroni
Long Macroni : 1 packet
Onion : 2 large
Garlic : 8 cloves
Tomatoes : 15 large
Ginger : 1 inch piece
Kisan Tomato Ketchup : 3-4 table spoon
Salt,Pepper : To taste
Sugar : 2 tsp (Optional)
Grated Cheese : 2-3 cups
Butter : 2 tbsp
Boil macaroni as per instructions. Boil onion,garlic,tomatoes,ginger & salt with 1/4th cup water. Cool & grind for a paste. Sieve for a smooth sauce. Pre- heat oven to 220 degree C. Heat 1 tbsp butter.Toss the macroni in it. Mix 1/2 of Cheese with the rest of ingredients & sauce. Add to macroni. Simmer till coated well & thick. Transfer the dish to a baking dish,sprinkle remaining cheese,dot with butter & bake till cheese melts & a golden brown layer is formed.
Serve hot with Potato Wafers.
Garlic Bread also goes well.
Tip : You can use macaroni of your choice, but in the long run, i have found long Licia (Brand) macaroni to be more scrumptious.
Any other Ketchup will do, but again Kissan's is more flavoursome.
Alternately, you can place macroni mix in individual oven plates,top with grated cheese,& grill till golden brown.
This delectable dish, i first had in Niros,in Jaipur (Rajasthan). I was around 15 yrs. And a big thanks goes to my Bhabhi Rita, who taught me to prepare this dish. At the same time, she also introduced us to CHINESE chow in Niros, which she cooks so well.
