Instant Dhokla

I love delving into the soft, fluffy, yummy Dhoklas. They unquestionably remain my family's favorite Snack even while in 'NATHDWARA' for 'Lord Shreenath Ji's' visit.  My darling daughter & me devour them to the last core. However, they never turned out right for me, though tried my best in numerous of time.Moreover, even got hold of all the handy advises from every nook and corner but all in vain.Never so spongy & fluffy creations exactly like Gujarati or Nathdwara perfection.
  But my ever lasting motto is Try Try & Try till I reach that aptness. & there is nothing more enjoyable & satisfying than seeing one's creation light up the beholder's eyes with mouth-watering temptation. So, not to keep you guys waiting I'll simply engrave the delicious recipe.
Ingredients:

Chick Pea Flour or Besan                          1 cup
Semolina or Sooji                                        1 1/2 tbsp
Salt                                                                to taste
Turmeric or Haldi                                         1/4 tsp
Sugar                                                              3 tsp
Ginger paste or grated                                      1 tsp
Green Chili paste or finely chopped                     1 tsp
Lemon juice                                                       1/2 tbsp
Oil                                                                     2 tsp
Luke-warm Water                                          1 cup approx.
Fruit (INO) Salt                                                          1 1/2 tsp

Method:

   Sieve besan with salt & Haldi. Mix in sooji, sugar, ginger & green chili. Mix oil & lemon juice in water. Add 3/4 cup water to besan mix & make a smooth batter. Take care to avoid any lumps. Now top the batter with Fruit Salt & pour remaining water over it. It will form a froth. Quickly give the batter a good whisk so that it absorbs the fruit salt. Pour it immediately in a 6 inch diameter greased dish & Micro on High for 3 1/2 minutes. Or you can steam it for 8- 10 minutes. Remove & cool a bit. Now temper it with the below mentioned method.. 

Tempering:

             Oil                                       1 -2 tsp
            Mustard seeds/Rai                   2 tsp
           Asafoetida/Hing                       a pinch
            Curry Leaves                         8-10
           Green chili chopped                2 tsp
           Water                                    1/2 tbsp
   
       Heat oil. Add mustard seeds & chili. Let it crackle. Remove from fire. Add hing, curry leaves & water. Pour over the Dhoklas. Cover & let it soak for 5 minutes.
         Garnish with coriander leaves & scraped Coconut. Serve with green coriander Chutney.
Can demolish them off  with Green Chili Sauce too.
